Ingredients

  • 1/3 cup butter
  • 1/4 cup powdered sugar
  • 1 egg yolk
  • 1/4 teaspoon almond extract
  • 1 cup all purpose flour

  • 1/3 cup butter
  • 8 ounces almond paste
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 teaspoon almond extract
  • 3/4 cup powdered sugar
  • Orange or lemon juice
  • 1/4 teaspoon almond extract

Directions

  1. To make cookies

  2. Cream butter and sugar well. Add egg yolk and almond extract. Mix well. Blend in flour, then chill for one hour. Pinch off marble size pieces and press into bottom and sides of tiny ungreased muffin tins. Bake at 375 for 7 to 8 minutes.

  3. Make filling

  4. Cream butter and almond paste until well blended. Beat in 1/2 cup sugar thoroughly. Blend in eggs and 1/2 teaspoon almond extract.

  5. Spoon into each baked shell and bake at 350 for 20 minutes.

  6. Prepare a thin frosting by combining 3/4 cup powdered sugar with orange or lemon juice and 1/4 teaspoon almond extract. Drizzle over outer edges of warm cookies. Makes 3 dozen.
