Buttermilk Cornbread

Ingredients

  • 1 cup flour
  • 3/4 cup corn meal
  • 2 tablespoons sugar
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 tablespoon butter
  • 2 eggs
  • 1 cup buttermilk
  • 1/4 cup oil
  • 1 cup shredded cheddar cheese (optional)
  • 1 4oz can of diced green chiles (optional)

Directions

  1. Combine dry ingredients in a medium mixing bowl.

  2. Preheat oven to 400 degrees

  3. Combine eggs, milk and oil in small bowl.

  4. Add butter to baking dish and bake until melted. Swirl butter to coat dish.

  5. Add wet ingredients to dry and stir until just combined. If using chiles and cheese, fold into batter.

  6. Pour batter in baking dish and bake for 15-20 minutes.
